T'Pol would have been a better Deltan. A Vulcan dressing provacatively would be ... illogical. If Blalock balks on shaving her head, Im sure some explanation could be made for some to retain hair. We know next to nothing about their race save for the sex thing.
In the ST IV novelization a Deltan man is shown with waist length red hair. So exceptions to the rule could follow. And the T&A aspect could still be had, and make more sense and more stories could have been written to flesh the race out, rather than ruining Vulcans by turning them into assholes like ENT did.
